Pennsylvania Kitchen: Behind the Scenes with Caputo Brothers Creamery

Oh, how we love Pennsylvania cheese! And we equally love getting to meet the people who make it. So, it was with great excitement that we welcomed Rynn Caputo of Caputo Brothers Creamery (based in Spring Grove, PA in York County) into the Pennsylvania Kitchen. Not only did she bring delectable cheeses and awesome DIY cheese-making techniques along for us to try, but Rynn shared the story of her homegrown company with us, too.

Rynn and her husband David founded Caputo Brothers Creamery in 2011; the “Brothers” in the name is a tribute to their sons, Giovanni and Matteo. Over the years, the family-run company has earned a stellar reputation for revolutionizing the mozzarella industry and for establishing sustainable partnerships with local dairy farms to source the highest quality milk possible. Via these relationships, Caputo Brothers Creamery has saved two dairy farms, and hopes to save more farms as they grow.

While Caputo Brothers might be best known for its fermented cheese curds that can be stretched into fresh mozzarella, its offerings go beyond that. Since 2018, Caputo Brothers Creamery formed a partnership with Giant Food Stores to develop in-store mozzarella and cannoli bars, as well as the creation of a new “gouda-style” cheese with Tröegs Independent Brewing (which, as we found out, makes insane fondue). Caputo Brothers also organizes and hosts many culinary experiences, including classes, dinners, and tours of Italy. Rynn knows Italy well, after many years of her own travels throughout Italy (including attending Culinary school in Calabria!), and it was, in fact, her discovery of traditional, cultured Italian cheeses that inspired her to found Caputo Brothers. Through the company’s various platforms, as well as speaking engagements, TV and podcast appearances and seats on various boards, Rynn strives to educate consumers on the downfalls of industrial cheese, and the importance of animal welfare, non-GMO feed, higher standards on cleanliness, and a better living wage for local farmers.
